Step 1: Large bowl combine flour, sugar, baking powder, baking soda and salt.
Step 2: In another bowl beat yogurt, egg, butter, lemon peel and lemon juice until smooth; Stir into dry ingredients until just moistened.
Step 3: Fold in the coconut. Fill greased muffin cups 2/3 full
Step 4: Bake 18-22 minutes or golden brown. Cool 5 minutes before removing to wire rack.
Step 5: Saucepan, combine lemon juice and sugar; cook and stir until sugar is dissolved. stir in coconut.
Step 6: Use toothpick and poke 6-8 holes i each muffin. Spoon the mixture over muffins. Serve warm or cool to room temperature
