Step by Step Method
Step 1
Heat oil in stock pot and add onion and carrot.
Step 2
Season lightly.
Step 3
Cook over medium heat until soft but not browned.

Add broth, thyme, and caraway seeds.

Bring to boil.
Step 6
Add broccoli and canned potatoes, bring to boil, cover, boil gently 5 minutes.
Step 7
Whisk in mashed potatoes and heat through.
Step 8
Add salt and pepper to taste.

For thicker chowder, in food processor, puree about 2 cups soup before adding potatoes. Stir into soup.
