  • 2 tablespoons oil
  • 1 cup onion, minced
  • 1 carrot, grated
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 20 ounces vegetable broth (2 cans)
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon caraway seeds
  • 10 ounces broccoli, frozen, thawed, chopped (1 box)
  • 2 1/2 cups mashed potatoes
  • 15 ounces potatoes, diced (1 can)

How to Make

  • Step 1: Heat oil in stock pot and add onion and carrot.

  • Step 2: Season lightly.

  • Step 3: Cook over medium heat until soft but not browned.

  • Step 4: Add broth, thyme, and caraway seeds.

  • Step 5: Bring to boil.

  • Step 6: Add broccoli and canned potatoes, bring to boil, cover, boil gently 5 minutes.

  • Step 7: Whisk in mashed potatoes and heat through.

  • Step 8: Add salt and pepper to taste.
