Step 1: Heat oil in stock pot and add onion and carrot.

Step 3: Cook over medium heat until soft but not browned.
Step 4: Add broth, thyme, and caraway seeds.

Step 6: Add broccoli and canned potatoes, bring to boil, cover, boil gently 5 minutes.
Step 7: Whisk in mashed potatoes and heat through.
Step 8: Add salt and pepper to taste.

Step 10: For thicker chowder, in food processor, puree about 2 cups soup before adding potatoes. Stir into soup.
