Step by Step Method

Step 1

Fry the bacon in a saucepan.

Step 2

Remove bacon and save for topping.

Step 3

When the fat has rendered slightly, tip in the onions and season lightly, stirring until the onions are translucent.

Then add the potato, peas and chicken stock and bring to the boil.

Step 5

Let the soup simmer until the potatoes are soft, then add the mint.

Step 6

Purée the soup with a stick blender until smooth.

Step 7

Season with salt and pepper and garnish with croutons, crusty bread or fried bacon bits.
