Step by Step Method
Step 1
Wash and drain fennel and sauté in the oil with the garlic, for approx; 10 minutes and then season.
Step 2
Blend to tomato paste with the wine and pour over the fennel. Taste at this stage and if you feel you need some salt then feel free to add just a pinch.
Step 3
Cover and simmer for 15 minutes or until tender.
