Ingredients

The ingredients are:
  • 4 fennel bulbs, quartered
  • 2 tablespoons olive oil
  • 1 clove garlic, crushed
  • Fresh ground black pepper, to taste
  • 2 tablespoons tomato paste
  • 1 cup white wine

How to Make

  • Step 1: Wash and drain fennel and sauté in the oil with the garlic, for approx; 10 minutes and then season.

  • Step 2: Blend to tomato paste with the wine and pour over the fennel. Taste at this stage and if you feel you need some salt then feel free to add just a pinch.

  • Step 3: Cover and simmer for 15 minutes or until tender.
