Step by Step Method

Preheat oven to 350f degrees.

In a saucepan, bring blueberries, sugar and orange juice to a boil, reduce heat and simmer until tender, about 10 minutes. Whisk cornstarch with 2 tablespoons water; whisk into blueberries and boil, stirring until thickened, about 1 minute. Place plastic wrap directly on surface, refrigerate until cool, about 1 hour.

Step 4

In a large bowl, whisk together oats, flour, sugar, orange rind and salt; with a pastry blender cut in the butter until coarse crumbs. Press half into an 8 inch square parchment paper lined metal cake pan; spread with blueberry filling. Sprinkle with remaining oat mixture, pressing lightly.

Step 5

Bake in centre of 350f degree oven until light golden, about 45 minutes. Let cool on rack before cutting into squares.

What a most wonderful treat this was, blueberries are my favorite fruit so when I saw this recipe I knew this would be the one I want to make, I made as stated only I used margarine, the fresh orange juice and rind really bring it to life. Thank you Derf

Made exactly as stated on the recipe and the end results were a delicious blueberry square that we all enjoyed with ice cream for a wonderful weekend treat, thank you Derf this turned out wonderful I'll make again for sure!
