Step by Step Method
Step 1
Beat yolks in a bowl or top of a double boiler until thick.
Step 2
Beat in hot syrup.
Step 3
Place top of double boiler or bowl over simmering water and cook, beating constantly until slightly thickened.
Step 4
Cool.
Step 5
Beat cream until it forms stiff peaks and fold into the yolk mixture.
Step 6
Fold in half of the berries.
Step 7
Pour into 1 1/2 quart mold form.
Step 8
Freeze overnight.
Step 9
Before serving garnish with the remaining berries.
