  • 6 egg yolks
  • 2 cups heavy cream
  • 3/4 cup maple syrup (heated, pure)
  • 1 pint blueberries

How to Make

  • Step 1: Beat yolks in a bowl or top of a double boiler until thick.

  • Step 2: Beat in hot syrup.

  • Step 3: Place top of double boiler or bowl over simmering water and cook, beating constantly until slightly thickened.

  • Step 4: Cool.

  • Step 5: Beat cream until it forms stiff peaks and fold into the yolk mixture.

  • Step 6: Fold in half of the berries.

  • Step 7: Pour into 1 1/2 quart mold form.

  • Step 8: Freeze overnight.

  • Step 9: Before serving garnish with the remaining berries.
