"We love them, especially with fresh Maine blueberries (though I may be partial). You actually can use any fruit when making these. I often use brown sugar twin to cut out the sugar. They are quick to make on busy mornings when you find yourself needing to run out the door, and they are healthy to boot!"

Step by Step Method

Step 1

Combine all the ingredients into a coffee mug. (Don't use a real small mug)

Step 2

Microwave for 1 minute on high, making sure it doesn't overflow.

Step 3

If it looks like it needs to be cooked a little longer, microwave for another 30 seconds until firm.

I love my muffins and these are super easy and quick on workdays especially. I have made them with strawberries, blueberries, apples and nectarines so far . Love these!

We love these! No heating up the oven when you make these, which is great in the summer. I love that they are so quick to make to, not to mention contain all healthy ingredients. We will have these many more times!

I loved the idea of making a muffin in a mug but after making one for me and my husband today, now I can say WE LOVE THEM! My husband was so surprised at how good they were and I only spent a total of about 7 minutes in the kitchen. A miracle for me!
