Step by Step Method

Step 1

Brown the ground beef with onion in a large skillet. COMPLETELY drain all grease and return to skillet. Over low heat, add refried beans, taco seasoning, and about half of the jar of picante sauce (you can eye this to see whats best, you don’t want the filling to be too runny or your tacos will be soggy on the bottoms). Blend well. scoop the beef filling mixture into the tacos (which should be “standing” position on a baking sheet). Sprinkle cheese over the top.

Step 2

Bake preheated 375 degrees for about 10 minutes.

Step 3

Serve with remaining taco sauce and your favorite toppings.

The ingredient tips, suggestions, variations, facts, questions and answers below are not edits to the original author's recipe. They are not meant to imply any change would improve the recipe. • Make sure to get the stand-and-stuff taco shells for this recipe, as regular taco shells will not work.
  • You may want to buy two jars of Picante sauce, as one may not be enough if you are topping the tacos.

  • Replace the ground beef with ground turkey for a leaner option. The benefit of this substitution is that it reduces the amount of saturated fat in the tacos, making them healthier.
  • Replace the picante sauce with salsa for a spicier option. The benefit of this substitution is that it adds more flavor and spice to the tacos, making them more flavorful.

Vegetarian Variation Substitute the ground beef with 2 cans of black beans, drained and rinsed. Follow the same instructions as above.

Mexican Rice: This is a great side dish to serve with Beef & Refried Bean Tacos. Mexican Rice is a classic Mexican side dish that is made with long grain white rice cooked in a tomato sauce and seasoned with garlic, onion, and cumin. The flavors of the rice will pair perfectly with the tacos and provide a delicious, flavorful accompaniment to the meal.

Spicy Black Bean Salad: This is a great light side dish to serve with Beef & Refried Bean Tacos. This salad is made with black beans, tomatoes, onions, cilantro, jalapenos, and a simple lime vinaigrette. The flavors of the salad will provide a nice contrast to the tacos and the spiciness of the jalapenos will add some heat to the meal.
