"Another of Greta's wonderful recipes. The quinoa replaces bread crumbs. Baking the meatloaf on a broiler pan versus in a loaf pan allows the fat to drain away and the exposure to the air gives a nice crusty exterior all around the loaf, not just on top. Check your bbq sauce to verify that it is gluten-free if that is important to you."

Step by Step Method

Step 1

Preheat oven to 350F.

Step 2

Spray a broiler pan with cooking spray or lightly oil; line bottom of pan with foil for easier cleanup.

Step 3

Mix all ingredients using 1/4 cup of the barbecue sauce in a large bowl and mix well with your hands.

Step 4

Form mixture into an 8 x 4 inch loaf on prepared pan.

Step 5

Slather top and sides of loaf with remaining 1/4 cup of barbecue sauce.

Step 6

Bake for about 1 hour 20 minutes or until meatloaf is cooked through.

Step 7

Let meatloaf stand for 10 minutes before serving for easier slicing.

This is an interesting recipe, but didn't quite work for me. It didn't slice well, just fell apart, and it needed salt. Sorry, Patti. I did like using bbq sauce, rather than ketchup.
