Ingredients

The ingredients are:
  • 907 grams lean ground beef (extra lean, 2 pounds)
  • 1 cup quinoa, cooked
  • 1/3 cup freshly grated Parmesan cheese
  • 1/2 cup barbecue sauce (divided)
  • 1 egg
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated or finely minced onion
  • 2 teaspoons minced garlic
  • 1 teaspoon dried basil
  • 1/2 teaspoon freshly ground black pepper

How to Make

  • Step 1: Preheat oven to 350F.

  • Step 2: Spray a broiler pan with cooking spray or lightly oil; line bottom of pan with foil for easier cleanup.

  • Step 3: Mix all ingredients using 1/4 cup of the barbecue sauce in a large bowl and mix well with your hands.

  • Step 4: Form mixture into an 8 x 4 inch loaf on prepared pan.

  • Step 5: Slather top and sides of loaf with remaining 1/4 cup of barbecue sauce.

  • Step 6: Bake for about 1 hour 20 minutes or until meatloaf is cooked through.

  • Step 7: Let meatloaf stand for 10 minutes before serving for easier slicing.
