"This is a fast and easy way to use up leftover grilled chicken. I have used grilled breast and thighs, with equal success. You could probably use leftover rotisserie chicken (or leftover pulled pork)."

Step by Step Method

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Place the pita bread rounds on a baking sheet or pizza stone.

Step 3

Spread about 1/4 cup of pizza sauce evenly over each pita bread round.

Step 4

Divide the diced grilled chicken among the pita bread rounds, spreading it evenly over the sauce.

Step 5

Sprinkle the shredded Italian blend cheese over the chicken.

Step 6

Drizzle a generous amount of BBQ sauce over the cheese.

Step 7

Top each pita pizza with thinly sliced red onion for added flavor.

Step 8

Place the baking sheet or pizza stone in the preheated oven and bake for 12-15 minutes, or until the cheese is melted and bubbly, and the edges of the pita bread are slightly crispy.

Step 9

Once the pizzas are cooked, remove them from the oven and let them cool for a few minutes.

Step 10

Sprinkle crushed red pepper flakes and Italian seasoning over the top of each pizza, if desired.

Step 11

Cut each pita pizza into quarters and serve hot.
