Step by Step Method

Step 1

Cover the potatoes with water, add celery, garlic, onion and salt

Step 2

Bring to a boil and cook until tender, approximately 15-20 minutes

Step 3

Remove celery and discard

Step 4

Drain potatoes through a sieve, drain really well, mash the potatoes

Step 5

Combine cottage cheese, buttermilk and basil, add to the mashed potaoes, mix well

Step 6

Reheat over very low heat or in a low oven so they are piping hot to serve

I scaled this recipe down to 2 and used dried basil as fresh herbs are non existent in grocery stores at this time and these turned out great. So creamy and rich, YUM!
