Step 1: Cover the potatoes with water, add celery, garlic, onion and salt
Step 2: Bring to a boil and cook until tender, approximately 15-20 minutes
Step 3: Remove celery and discard
Step 4: Drain potatoes through a sieve, drain really well, mash the potatoes
Step 5: Combine cottage cheese, buttermilk and basil, add to the mashed potaoes, mix well
Step 6: Reheat over very low heat or in a low oven so they are piping hot to serve
