Ingredients

The ingredients are:
  • 3 1/2 pounds potatoes, peeled, cut in 1 1/2 inch cubes
  • 1 medium onion, finely chopped
  • 3 stalks celery, cut in half
  • 12 large cloves garlic, peeled, chopped
  • 1/2 teaspoon salt
  • 1/2 cup 2% cottage chesse, well drained
  • 1/2 cup buttermilk
  • 3 tablespoons fresh basil, finely chopped

How to Make

  • Step 1: Cover the potatoes with water, add celery, garlic, onion and salt

  • Step 2: Bring to a boil and cook until tender, approximately 15-20 minutes

  • Step 3: Remove celery and discard

  • Step 4: Drain potatoes through a sieve, drain really well, mash the potatoes

  • Step 5: Combine cottage cheese, buttermilk and basil, add to the mashed potaoes, mix well

  • Step 6: Reheat over very low heat or in a low oven so they are piping hot to serve
