Step by Step Method

Step 1

Combine barley with salt and 4 cups water. Bring to a boil, reduce, heat, cover and simmer 1 hour or until barley is tender. It may need some stirring to cook evenly and to keep it from sticking to the bottom of the pan.

Step 2

Drain and rinse with hot water to remove excess starch. Cover and keep hot.

Step 3

Sauté onion in butter about 5 minutes.

Step 4

Add parsley and poultry seasoning to the onion and stir the mixture into the barley.

Thanks for this great recipe. It is a wonderful alternative to rice (and better for my blood sugars). Really liked the poultry seasoning in this. A great side to a fish filet.

I love barley and have never had anything similar to this, which I really loved. While it does take an hour of simmering time, it's so easy to make. You just need to get it started early, and then it takes about 5 minutes an hour later. I made a half recipe, using 2 shallots instead of regular onion, medium barley instead of pearl and using the spices that go into poultry seasoning per Google. Wonderful flavor!
