"This is a recipe that my DD made once, it came from a junior cookbook my DS was given as a child. So it is quite easy to make and has wonderful sticky flavours! Prep times does not include marinating time."

Step by Step Method

Step 1

Using a sharp knife cut the racks of ribs into smaller pieces so that each piece has 3 or 4 ribs in piece.

Step 2

Combine the tomato sauce, sherry, Worcestershire sauce, soy sauce, honey, garlic, ginger and chilli flakes in a large pan.

Step 3

Add the ribs to the mixture, Bring to the boil; reduce the heat and simmer, uncovered for 15 minutes, rotating the ribs often to ensure even cooking.

Step 4

Remove ribs and transfer the ribs and sauce mix to a shallow non metallic dish; and allow to cool. Cover with plastic wrap and refrigerate for several hours or preferably overnight.

Step 5

Place the ribs on a preheated, lightly oiled barbeque grill or hotplate, and cook over the hottest part of the fire for 15 minutes, turning and brushing occasionally with any remaining sauce.

Step 6

Serve immediately

The weather did not permit for us to grill the ribs so I cooked them in the oven then crisped them under the broiler while brushing them with the sauce. The only change I made to the recipe was to add a good dash of pepper to the ribs before broiling them. They turned out perfectly!!!
