Step 1: Using a sharp knife cut the racks of ribs into smaller pieces so that each piece has 3 or 4 ribs in piece.
Step 2: Combine the tomato sauce, sherry, Worcestershire sauce, soy sauce, honey, garlic, ginger and chilli flakes in a large pan.
Step 3: Add the ribs to the mixture, Bring to the boil; reduce the heat and simmer, uncovered for 15 minutes, rotating the ribs often to ensure even cooking.
Step 4: Remove ribs and transfer the ribs and sauce mix to a shallow non metallic dish; and allow to cool. Cover with plastic wrap and refrigerate for several hours or preferably overnight.
Step 5: Place the ribs on a preheated, lightly oiled barbeque grill or hotplate, and cook over the hottest part of the fire for 15 minutes, turning and brushing occasionally with any remaining sauce.
Step 6: Serve immediately
