Barbecued Bacon Meatloaf

Step by Step Method
Step 1
Cook the bacon in a skillet. Cool, chops then process in a processor until fine minced.
Step 2
Soak bread in a bowl of milk for several minutes.
Step 3
Combine beef, minced bacon, bread, onions, bell pepper, jalapeno pepper garlic, parmesan cheese, 4 ounces tomato sauce, diced tomatoes, seasoned salt, pepper and basil in large mixing bowl. Using your hands, knead the mixture and work into a loaf and place on top of a large, greased broiler pan (a pan with holes in the bottom to drain all the fat or on top of a rack fitted on a baking sheet).
Step 4
Bake at 350 degrees until beef is no longer pink in the center and reaches an internal temperature of 160 degrees, about 1 hour and 15 minutes.
Step 5
Once meatloaf is done, baste with BBQ sauce and return to oven for another 10-15 minutes.
Step 6
Remove meatloaf from the oven, baste again and let stand for about 10 minutes before serving with remaining sauce.
