Ingredients

The ingredients are:
  • 1 1/2 pounds lean ground beef
  • 1/2 pound bacon
  • 5 slices white bread (soaked in about 1/4-1/3 cup milk or just a little more)
  • 1 yellow onions, chopped
  • 1 green bell peppers, chopped
  • 1 large jalapeno pepper (seeded, fine chopped)
  • 4 garlic cloves, minced
  • 1/2 cup shredded parmesan cheese
  • 2 large eggs, beaten
  • 4 ounce tomato sauce
  • 1 can (14 ounce) diced tomatoes (drained)
  • 2 teaspoons seasoned salt
  • 1 teaspoon black pepper
  • 1 teaspoon basil
  • Barbecue sauce

How to Make

  • Step 1: Cook the bacon in a skillet. Cool, chops then process in a processor until fine minced.

  • Step 2: Soak bread in a bowl of milk for several minutes.

  • Step 3: Combine beef, minced bacon, bread, onions, bell pepper, jalapeno pepper garlic, parmesan cheese, 4 ounces tomato sauce, diced tomatoes, seasoned salt, pepper and basil in large mixing bowl. Using your hands, knead the mixture and work into a loaf and place on top of a large, greased broiler pan (a pan with holes in the bottom to drain all the fat or on top of a rack fitted on a baking sheet).

  • Step 4: Bake at 350 degrees until beef is no longer pink in the center and reaches an internal temperature of 160 degrees, about 1 hour and 15 minutes.

  • Step 5: Once meatloaf is done, baste with BBQ sauce and return to oven for another 10-15 minutes.

  • Step 6: Remove meatloaf from the oven, baste again and let stand for about 10 minutes before serving with remaining sauce.
