I made these using ground turkey. Very moist and so good. We each ate two!

We loved these muffin cups! They taste so good. I served them with baked potatoes and sauteed green beans. A must try again recipe!

I doubled it to make twice as many cupcakes because I knew my kids would love them and I wanted to have some to bring to work with me. I mashed up some potatoes and steamed some carrots and we had a delicious meal for ourselves. The kids each had 2!! We will have these on a regular basis because we loved them so much and they are easy to make and take less time than meatloaf to cook.

After I saw Bergy's photos of this meatloaf I knew I had to make it. So,on 5/14 I did. :)I did change a couple of things though, instant onions were used instead of fresh(I was lazy). Also instead of making 4 mini loaves, 2 8 ounce loaves were formed. The amount of sauce was just right to cover both of the loaves. I baked them at 350 degrees for about 45 minutes, and they turned out perfect. Before slicing, I let them " rest " for a few minutes, and they sliced perfectly. If your looking for a basic no nonsense meatloaf, look no further you've found it.Thanks for posting a recipe that will be made again and, " Keep Smiling :) "

I made these last night for dinner, and also for leftovers. The recipe is simple, economical, easy to prepare, and TASTY! It's hard to beat all four of those terms.....OH, and add to that QUICK! I made 8 muffins out of the recipe, because I like to eat them on mini hamburger buns. But they are also great as meatloaf w/sides. Most of mine are already in the freezer for quick freezer to micro snacks or meals. Thanks! A few thoughts. If you are really in rush, these could be made with your fave bottle sweet sauce. Don't try it with very thin, vinegary sauce, as the end resuld is not going to turn out right....the sauce in the recipe worked great. I put it on 4 of the muffins. Then I tried KC Original on 2, and vinegary, hot on two(very liquidy). Stick right by the recipe as written, but you may want to even try a sweet, thick store brand of your liking.
