Step by Step Method

Step 1

Heat oven to 400 degrees F.

Step 2

Place the baking rack in the lower third of the oven.

Step 3

Heat olive oil in a 12-inch skillet over medium-high heat.

Step 4

Add potatoes, garlic, and shallots.

Step 5

Toss in skillet until well mixed.

Step 6

Add thyme, rosemary, and nutmeg, and toss well.

Step 7

When the potatoes are hot, transfer them to a baking pan and spread in a single layer.

Step 8

Place pan in preheated oven on lower rack.

Step 9

Roast potatoes until golden and just tender, about 25 minutes, turning once midway.

Step 10

Add vinegar, and toss well.

Step 11

Season to taste with salt and pepper.

Step 12

Return to oven until sizzling, about 7 minutes.

Step 13

Serve immediately.

Delicious and so easy to make...I cooked them in my air fryer and they came out perfect...the skin had a nice touch of crispness while the insides were tender...loved the balsamic and rosemary flavors...made these to go along side of your recipe#11775 (balsamic pot roast)...what a great comfort meal we had...thanks for sharing your recipe...

These were great! Easy to make and so flavourful. I love warm potatoe salad with vinegar and oil, so this was a terrific kind of variation on that with roasted potatoes. Another keeper, thanks for sharing!
