  • 1/4 cup balsamic vinegar

How to Make

  • Step 1: Heat oven to 400 degrees F.

  • Step 2: Place the baking rack in the lower third of the oven.

  • Step 3: Heat olive oil in a 12-inch skillet over medium-high heat.

  • Step 4: Add potatoes, garlic, and shallots.

  • Step 5: Toss in skillet until well mixed.

  • Step 6: Add thyme, rosemary, and nutmeg, and toss well.

  • Step 7: When the potatoes are hot, transfer them to a baking pan and spread in a single layer.

  • Step 8: Place pan in preheated oven on lower rack.

  • Step 9: Roast potatoes until golden and just tender, about 25 minutes, turning once midway.

  • Step 10: Add vinegar, and toss well.

  • Step 11: Season to taste with salt and pepper.

  • Step 12: Return to oven until sizzling, about 7 minutes.

  • Step 13: Serve immediately.
