Step 9: Roast potatoes until golden and just tender, about 25 minutes, turning once midway.
Step 10: Add vinegar, and toss well.
Step 11: Season to taste with salt and pepper.
Step 12: Return to oven until sizzling, about 7 minutes.
Step 13: Serve immediately.
