Balsamic-Maple Roasted Brussel Sprouts

Step by Step Method
Step 1
Preheat oven to 400°F.
Step 2
Cut woody stem from brussel sprouts and cut in half (in quarters if they are very large). Place in a large bowl. Add chopped onions.
Step 3
Mix balsamic vinegar, maple syrup, oil and seasonings in a small bowl. Then pour over brussel sprouts and onions and stir well to coat everything. Pour out onto a baking sheet that has been sprayed with non-stick cooking spray. Spread out evenly in one layer. Bake in preheated 400°F oven for 45-50 minutes, stirring once half-way through. Or bake until brussel sprouts are caramelized and tender when inserting a fork.
Step 4
While the brussel sprouts are baking, fry the bacon until crisp. Drain well on paper towels and chop up.
Step 5
When brussel sprouts are done, mix in the cooked bacon and pecans. Place into a nice serving dish and sprinkle goat cheese crumbles on top.
