Step by Step Method

Step 1

Preheat oven to 400 degrees F.

Step 2

In a skillet over medium heat add the first 3 ingredients (-butter) and bring them to a boil and then lower the heat and let simmer until reduced to 1 1/4 cups (10-15 minutes)

Step 3

Meanwhile cut a cone-shaped piece from the stem end of each apples (about 2 inches wide at top and 1 inch deep) and then using a melon baller core, leaving bottom intact (you are going to stuff apple center).

Step 4

Turn apple on its side and then starting halfway down, make a 1/4 inch slit all around.

Step 5

In a bowl mix together the fruit (mincemeat, cherries and ginger) and then spoon into the center of the apples, mondering in the center.

Step 6

Arrange apples in a 11 x 7 x 2 inch baking dish and spoon the cider mixture over all and around the apples. Bake for 45 minutes or until apples are tender. Serve in bowls with whipped cream or vanilla ice cream.
