Step by Step Method

Step 1

To make the steak seasoning: heat a cast-iron skillet over medium heat. Add the first 4 ingredients (salt - cardamom) and toast for 2 minutes, stirring constantly. Let cool for 5 minutes. Stir in sugar.

Step 2

Sprinkle steaks with the steak seasoning.

Step 3

In a bowl stir together 1/2 cup butter, thyme, parsley and salt. Transfer mixture to a sheet of parchment paper. Roll into a tight log in parchment; twist ends to tighten. Wrap in foil and freeze until solid (30 minutes).

Step 4

Wrap each fillet with 1 slice bacon, securing with a wooden pick, if needed.

Step 5

In a large cast iron skillet, heat remaining butter (2 T) over medium high heat. Add fillets; cook bacon-wrapped sides first until browned and crispy. Turn, and cook flat side down to desired degree of doneness (5-6 minutes per side) for medium. Let stand 5 minutes before serving. Top with herb butter.

My wife made these and we really enjoyed them. I can't wait for the weather to warm up so we can try this on the grill.

I scaled this recipe down to two servings and followed instructions as listed, but using tenderloin, in lieu of filet mignon. These steaks turned out perfectly cooked, to our liking. Great flavors from the seasoning mix which I have lots of leftover for next time I make these.

Delicious!! We like our steak med-rare so I cooked the bacon a little bit before I wrapped it around the steak. It helped to cook the bacon all the way through before the steak was done.
