Ingredients

The ingredients are:
  • 4 (8 ounce steak = 2 pounds total) beef filet mignon (1 1/2 inch thick)
  • 1 tablespoon steak seasoning (recipe follows)
  • 1/2 cup unsalted butter (plus)
  • 2 tablespoons unsalted butter (softened and divided)
  • 1 tablespoon thyme, chopped
  • 1 tablespoon parsley, chopped
  • 1 teaspoon sea salt flakes
  • 4 ounces sliced bacon (thin-sliced bacon)
  • FOR THE STEAK SEASONING
  • 1/4 cup sea salt flakes
  • 2 tablespoons ground black pepper
  • 2 teaspoons mustard seed (ground)
  • 1 teaspoon cardamom (ground)
  • 2 tablespoons turbinado sugar

How to Make

  • Step 1: To make the steak seasoning: heat a cast-iron skillet over medium heat. Add the first 4 ingredients (salt - cardamom) and toast for 2 minutes, stirring constantly. Let cool for 5 minutes. Stir in sugar.

  • Step 2: Sprinkle steaks with the steak seasoning.

  • Step 3: In a bowl stir together 1/2 cup butter, thyme, parsley and salt. Transfer mixture to a sheet of parchment paper. Roll into a tight log in parchment; twist ends to tighten. Wrap in foil and freeze until solid (30 minutes).

  • Step 4: Wrap each fillet with 1 slice bacon, securing with a wooden pick, if needed.

  • Step 5: In a large cast iron skillet, heat remaining butter (2 T) over medium high heat. Add fillets; cook bacon-wrapped sides first until browned and crispy. Turn, and cook flat side down to desired degree of doneness (5-6 minutes per side) for medium. Let stand 5 minutes before serving. Top with herb butter.
