Bacon, Onion, Avocado, and Tomato Sandwich
"Perfect summer sandwich. Bacon, mayo, tomato, avocado and of course cheese. And, for me ... a good fresh whole wheat bread. Now, I happened to use a smoky turkey bacon, but use your favorite. And, I also used a thin sliced Farmers cheese which is delicious; but, my first choice would be a white cheddar, if possible. Again, there is no right or wrong."

Step by Step Method
Step 1
Bacon ... Add the bacon to a small saute pan (non-stick preferred) and bring to medium low heat. Cook slowly render, no oil needed - just cook it slowly until golden brown and crisp. Be patient. Then remove to a plate lined with a paper towel.
Step 2
Sauce ... Once the bacon has cooled off a bit, add to a small bowl along with the the mayonnaise, cilantro, and season with salt and pepper and mix well.
Step 3
Sandwich ... Toast the bread, then top with some of the bacon mayonnaise, topped with the onion slices, 3 tomato slices - and season with a bit of salt and pepper, avocado, and of course ... cheese. Now, I prefer a fresh, farmers cheese which is very mild, but a fresh mozzarella is a nice substitute.
Step 4
Broil ... Heat up the broiler and add the sandwiches to a baking sheet lined with foil or parchment paper. Add the pan to the second shelf down on broil for 3-4 minutes to melt the cheese. The bread is already toasted, so you are just melting the cheese.
Step 5
Finish and Serve ... Top with the final slice of bread, also slathered with some of the bacon mayo, slice and ENJOY! It is a nice twist on the traditional BLT. And if you want ... You can add lettuce or slices of cheese too.
