Step by Step Method
Step 1
Place mâche and arugula in a large salad bowl, set aside.
Step 2
Cut the papaya in half lengthwise, then scoop out seeds and membrane. Set aside 2 tbsp. of the seeds if you're making the dressing. Peel the papaya and slice crosswise into 1/4 inch slices. Set aside.
If you're making the Papaya seed dressing, stop here and make the dressing before continuing
Step 3
Peel, pit, and slice the avocados. Set aside.
Step 4
Dress the mâche and arugula with about half the dressing or to your liking, tossing to combine.
Step 5
Place a pile of greens in the center of six salad plates. Arrange the avocado and papaya alternately over the greens. Sprinkle with nuts and grate some fresh pepper over each. Drizzle with a bit more dressing if desired. Serve immediately.
This is equally good with mango instead of papaya, or use all three!
