"My fondness for particular ingredients seems to run in spurts. Right now I'm a woman on a mission to find & binge on AVOCADO recipes. To make a long story shorter, this recipe was inspired by another recipe I could live without so I modified the avocado Hollandaise part of the recipe to better suit our personal tastes & got what I was after. All that said, I'm ready to use it in my creative ways & hope you'll help by making it & sharing your thoughts w/me. ENJOY!"

Step by Step Method
Step 1
Melt the butter & set aside to cool slightly.
Step 2
Halve the avocado, remove the seed & spoon the avocado pulp into a food proc, blender or wide-mouth jar (See Note). Add the lemon juice plus hot water & blend until smooth. Continue to blend as you add the olive oil & butter.
Step 3
Taste for flavor & textural consistency. May add 1 extra tbsp of water as needed. Then add salt, pepper & Tabasco to taste. Stir lemon zest into mixture & use immediately or store in the refrigerator for later use.
NOTE: I have a wide-mouth jar w/a lid that I use often for recipes like this & then I reach for my trusty hand-held blender so I can get the job done easily & use the jar for storage
Tips
- Food processor, blender or hand-held blender (my choice)
