Step 1: Melt the butter & set aside to cool slightly.
Step 2: Halve the avocado, remove the seed & spoon the avocado pulp into a food proc, blender or wide-mouth jar (See Note). Add the lemon juice plus hot water & blend until smooth. Continue to blend as you add the olive oil & butter.
Step 3: Taste for flavor & textural consistency. May add 1 extra tbsp of water as needed. Then add salt, pepper & Tabasco to taste. Stir lemon zest into mixture & use immediately or store in the refrigerator for later use.
