What a great breakfast/brunch this is, so tasty and so easy.... I didn't use orange rind as I did not have oranges, but I added a bit of orange juice instead. This is a keeper for sure.

Yum! I scaled this down for 1 and halved the cook time. I love that it's a healthy breakfast that still feels elevated. The apple, cinnamon, and orange flavors are wonderful. Thank you!
