Step by Step Method
Step 1
In a non-stick pan, cook potatoes onions in Vegetable broth (use just enough to get potatoes soft ,not mushy,may need to add more water)
Step 2
When potatoes have boiled dry, remove from pot

Add oil to pan; heat
Step 4
Beat eggs with herbs,they probably used fresh if using dry just a little bit
Step 5
Put potatoes in hot pan and pour egg mixture over
Step 6
Cook covered
Step 7
Until browned and set,dont overcook
Step 8
Cut in wedges serve lukewarm
