  • 1 pound potatoes ,cubed (peeled)
  • 1/2 cup onion, chopped
  • 1 cup vegetable stock
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1 teaspoon chives, minced
  • 1/16 teaspoon oregano
  • 1/16 teaspoon thyme
  • 1/2 teaspoon basil
  • 4 eggs

How to Make

  • Step 1: In a non-stick pan, cook potatoes onions in Vegetable broth (use just enough to get potatoes soft ,not mushy,may need to add more water)

  • Step 2: When potatoes have boiled dry, remove from pot

  • Step 3: Add oil to pan; heat

  • Step 4: Beat eggs with herbs,they probably used fresh if using dry just a little bit

  • Step 5: Put potatoes in hot pan and pour egg mixture over

  • Step 6: Cook covered

  • Step 7: Until browned and set,dont overcook

  • Step 8: Cut in wedges serve lukewarm
