Step 1: In a non-stick pan, cook potatoes onions in Vegetable broth (use just enough to get potatoes soft ,not mushy,may need to add more water)
Step 2: When potatoes have boiled dry, remove from pot
Step 3: Add oil to pan; heat
Step 4: Beat eggs with herbs,they probably used fresh if using dry just a little bit
Step 5: Put potatoes in hot pan and pour egg mixture over
Step 6: Cook covered
Step 7: Until browned and set,dont overcook
Step 8: Cut in wedges serve lukewarm
