"I am not sure about other parts of the world....but High Teas has become very popular here in Australia with both young and old. I hosted a High Tea over 20 years ago and came across some of the recipes. I have been to a few High Teas recently and things haven't changed! As with any sandwich, you must use fresh bread. These rolls are best made only an hour or less before service. The butter will act as a seal only for a little while, but even for a little while it stops the bread going soggy. If rolls start to dry out cover with dampened grease proof paper."

Step by Step Method

Step 1

If using loaf bread; place in refrigerator to allow to firm. Don't leave to long or it will become stale. (This is why I use sliced).

Step 2

Soften the butter or margarine and season with salt and pepper.

Step 3

Slice the bread thinly and remove crusts.

Step 4

Roll bread with a rolling pin to flatten slightly, & spread the crust less bread thinly with the butter mix.

Step 5

Place an asparagus spear on the edge of the bread slice and roll the bread up.

Step 6

You can use a tooth pick to hold if needed, and remove before serving.

Step 7

Wrap in plastic wrap and refrigerate until ready to serve.
