"A quick and easy grilling sauce that is full of flavor. The sugar allows the shrimp to get a nice sear or crust - so, this recipe really works best on a grill, whether it be outside or inside. A saute pan will work, but you just don't get the same flavor. These skewers can be served as an appetizer, a main course, over a salad; or, however you want. I like to serve these with grilled vegetable skewers, and serve over rice. They are quick and easy to make, which makes them a great weeknight meal. This sauce also works very nicely with scallops."

Step by Step Method
Step 1
Sauce ... Add all the ingredients to a small bowl, mix well, and microwave on medium heat for 1-2 minutes stirring every 30 seconds. Heat another minute or two until everything is well combined and the sugar is dissolved. This can also be done on the stove top, but the microwave is so much easier. Let the sauce cool a bit before using.
Step 2
Grill ... Spray your grill inside or out with a non stick spray, or brush with olive oil. If using an outside charcoal grill, and using wooden skewers, make sure to soak your skewers in water for 15 minutes. Otherwise, if using a gas grill or inside grill pan, it isn't necessary. Thread the shrimp on the skewers, and brush with the sauce on both sides; then, season with pepper. Add to the grill and cook 3-4 minutes on the first side; then, flip, and brush with the remaining sauce. Cook another couple of minutes until the shrimp just begin to curl and are pink. You don't want to overcook your shrimp.
Step 3
Serve ... Brush any remaining sauce on the shrimp, garnish with the chopped peanuts, and serve. As I said ... appetizers, main course, side dish or served over a salad - ENJOY!
