Ingredients

The ingredients are:
  • 1 1/2 pounds shrimp, peeled deveined and tails removed
  • Pepper
  • Sauce:
  • 1/4 cup creamy peanut butter
  • 1/4 cup soy sauce (low salt)
  • 3 cloves garlic, minced
  • 1/4 cup white sugar
  • 2 tablespoons vegetable oil
  • Pinch red pepper flakes
  • 1 tablespoon water
  • Garnish: peanuts, chopped

How to Make

  • Step 1: Sauce ... Add all the ingredients to a small bowl, mix well, and microwave on medium heat for 1-2 minutes stirring every 30 seconds. Heat another minute or two until everything is well combined and the sugar is dissolved. This can also be done on the stove top, but the microwave is so much easier. Let the sauce cool a bit before using.

  • Step 2: Grill ... Spray your grill inside or out with a non stick spray, or brush with olive oil. If using an outside charcoal grill, and using wooden skewers, make sure to soak your skewers in water for 15 minutes. Otherwise, if using a gas grill or inside grill pan, it isn't necessary. Thread the shrimp on the skewers, and brush with the sauce on both sides; then, season with pepper. Add to the grill and cook 3-4 minutes on the first side; then, flip, and brush with the remaining sauce. Cook another couple of minutes until the shrimp just begin to curl and are pink. You don't want to overcook your shrimp.

  • Step 3: Serve ... Brush any remaining sauce on the shrimp, garnish with the chopped peanuts, and serve. As I said ... appetizers, main course, side dish or served over a salad - ENJOY!
