Step by Step Method
Step 1
Preheat oven to 350° F
Step 2
Season the roast with salt and pepper, and cut 5 or more deep gashes in it.
Step 3
Fill these with a combination of parsley and minced garlic.
Step 4
Rub well with flour and put into a 350° F oven for 30 minutes.
Step 5
Meanwhile, make a baste of the stock, wine, and anise seed.
Step 6
Simmer the baste for 15 minutes.
Step 7
At the end of the 30 minutes in the oven, reduce the heat of the oven to 325° F, and cook for 25 minutes to the pound, basting every 15 or 20 minutes.
Step 8
If roast begins to become dry in the last hour of cooking, it may be covered with foil.
