Ingredients

The ingredients are:
  • 3 to 5 pounds pork roast
  • Salt and pepper
  • 3 tablespoons minced parsley
  • 2 garlic cloves, minced
  • Flour
  • 1 cup chicken stock
  • 1 tablespoons anise seed
  • 1/2 cup white wine

How to Make

  • Step 1: Preheat oven to 350° F

  • Step 2: Season the roast with salt and pepper, and cut 5 or more deep gashes in it.

  • Step 3: Fill these with a combination of parsley and minced garlic.

  • Step 4: Rub well with flour and put into a 350° F oven for 30 minutes.

  • Step 5: Meanwhile, make a baste of the stock, wine, and anise seed.

  • Step 6: Simmer the baste for 15 minutes.

  • Step 7: At the end of the 30 minutes in the oven, reduce the heat of the oven to 325° F, and cook for 25 minutes to the pound, basting every 15 or 20 minutes.

  • Step 8: If roast begins to become dry in the last hour of cooking, it may be covered with foil.
