Heat oven to 350 degrees
Grease and flour two layer baking pan, 9 or 8 inch.
In a chilled bowl beat cream until stiff
Beat eggs until thick and lemon coloured
Fold eggs, extract and chocolate into whipped cream
Stir together dry ingredients and gently fold into whipped cream mixture until blended
Pour into pans
Bake 30-35 min or until toothpick inserted in center comes out clean.
Let cool
To make the topping, whip whipping cream with extract and sugar until stiff
To assemble, level cake layers and split to make 4 layers
Place first layer on a serving plate and top with 1/4 of the almost cream, Top with second layer and repeat, using 1/4 cream to top each layer
Decorate with grated chocolate or almonds
