Step 1: Heat oven to 350 degrees
Step 2: Grease and flour two layer baking pan, 9 or 8 inch.
Step 3: In a chilled bowl beat cream until stiff
Step 4: Beat eggs until thick and lemon coloured
Step 5: Fold eggs, extract and chocolate into whipped cream
Step 6: Stir together dry ingredients and gently fold into whipped cream mixture until blended
Step 7: Pour into pans
Step 8: Bake 30-35 min or until toothpick inserted in center comes out clean.
Step 9: Let cool
Step 10: To make the topping, whip whipping cream with extract and sugar until stiff
Step 11: To assemble, level cake layers and split to make 4 layers
Step 12: Place first layer on a serving plate and top with 1/4 of the almost cream, Top with second layer and repeat, using 1/4 cream to top each layer
Step 13: Decorate with grated chocolate or almonds
