Step by Step Method
Step 1
Using a food processor, process the almonds until finely ground, about 1 minute. They'll probably clump together because of the oils in the nut - and that's ok!
Step 2
Add the remaining ingredients and process for about another minute, until well-combined.
Step 3
Empty the mixture onto a surface dusted with confectioner's sugar and form the clump into a log shape. Wrap the log in plastic wrap and refrigerate for about an hour or until firm. *Note: the Almond Paste can be stored in the refrigerator for about a week.
