Agua de Sapo
"Literally, the name means "Toad Water". Not very appealing, I know!!! But even the story of how this Costa Rican recipe came to be doesn't involve any real toads! This is a tart and tangy drink made with tapa de dulce, fresh ginger, and mandarina juice. A mandarina is a Costa Rican fruit that looks like a sick lime. The inside is a bright orange and it has the fragrance of a mandarin, but is very sour. I use them in place of lemons and limes, so I'm sure you can substitute either in this recipe. The tape de dulce is sold in little bundles wrapped in palm leaves. Very similar to brown or raw sugar, it is simply sugar cane juice boiled down until it turns caramelly, then cooled and dried in a mold. This drink is refreshing and the ginger flavor shines through!"

Step by Step Method
Step 1
Bring the water to a boil with the sugar and the ginger. Stir until the sugar is fully dissolved.
Step 2
Strain and let cool.
Step 3
Serve over lots of ice.
