This reminds me of a chili version of Wapatoolie! We loved it - it was nice to be able to pick and choose what to throw in based on what I had on hand. I set the crock pot on High for about 3 hrs and then low until serving time. It worked out just fine!

I've made several versions of this, and this version did not disappoint. I made it after I got off work and let it simmer for 2 hours on the stovetop. Perfect!! We will make this again! Made for your win in Football Tag game.

We loved this thick soup...I threw in a poblano pepper only because I had one that needed to be used...I used pinto beans and kidney beans that's what I had available...and I used a can of corn instead of the cream corn...I love recipes that give you plenty of options and variations...it's like pick what you have in the pantry and frig... I topped hubbies with sour cream and cheese and gave him some chips on the side...and I have leftovers in the freezer...for another day...made for FYC tag game...

The Rotel brand of tomatoes used in this recipe was invented in 1937 by a German immigrant named Carl Roettele. He and his family settled in Texas and developed this unique blend of tomatoes and green chilies.

The dry ranch dressing mix used in this recipe was first developed by Steve Henson in the 1950s. He and his wife Gayle opened the Hidden Valley Ranch in California, and the ranch dressing mix quickly became a popular condiment.
