Step by Step Method

Step 1

Saute the onions in olive oil over medium high heat.

Step 2

Add ground beef and seasoned salt.

Step 3

Cook until medium well. Break up with fork.

Step 4

Add spinach and whole eggs and stir and cook until done, but not dry.

Step 5

Serve on individual plates. Sprinkle with combined cheeses.

This is a great breakfast for dinner. Maybe a little hearty for regular breakfast, but great for brunch or in burritos! We really enjoyed it and it was so easy to make. Made for your win in football tag!

I can taste why this is a staple at 13 Coins - this is a delicious mixture! I did have to increase the seasoned salt (and I'm not a fan of salty food!), but otherwise this is top notch! Leftovers were rolled up in a flour tortilla this morning and made for an excellent breakfast burrito, with a little salsa. Next time, I may try substituting kale for the spinach, just for a change of pace. Thanks for sharing, Mike! This is a keeper!
