Step by Step Method
Step 1
Pre-bake potatoes and let cool completely. Preheat oven to 475 degrees. Place foil on a rimmed baking sheet.
Step 2
Cut potatoes in half and scoop out pulp, leaving 1/4 inch shell. Place on baking sheet. I save the pulp for making potato pancakes.
Step 3
Combine oil, parmesan, salt, garlic powder, paprika and pepper and brush on potatoes, bottom first, then top. Bake about 8 minutes and turn over. Bake for another 6 minutes or so, then turn right side up.
Step 4
Sprinkle cheddar, bacon and green onions evenly inside skins and bake 2 minutes longer or til cheese is melted. Serve with sour cream.
