Step by Step Method

Step 1

Pre-bake potatoes and let cool completely. Preheat oven to 475 degrees. Place foil on a rimmed baking sheet.

Step 2

Cut potatoes in half and scoop out pulp, leaving 1/4 inch shell. Place on baking sheet. I save the pulp for making potato pancakes.

Step 3

Combine oil, parmesan, salt, garlic powder, paprika and pepper and brush on potatoes, bottom first, then top. Bake about 8 minutes and turn over. Bake for another 6 minutes or so, then turn right side up.

Step 4

Sprinkle cheddar, bacon and green onions evenly inside skins and bake 2 minutes longer or til cheese is melted. Serve with sour cream.

Yummy...just like the title says...we loved the crispy skins...the rest of the ingredients worked well together...made as posted but cut it down to 1 potato which served the two of us on one of our appy nights...made for "What's On The Menu" tag game...
