Ingredients

The ingredients are:
  • 4 large baking potatoes, baked
  • 3 tablespoons vegetable oil
  • 1 tablespoon grated parmesan cheese
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/8 teaspoon fresh ground pepper
  • 8 ounces shredded cheddar (2 cups)
  • 8 slices bacon, cooked and crumbled
  • 4 green onions, sliced
  • 1/2 cup sour cream

How to Make

  • Step 1: Pre-bake potatoes and let cool completely. Preheat oven to 475 degrees. Place foil on a rimmed baking sheet.

  • Step 2: Cut potatoes in half and scoop out pulp, leaving 1/4 inch shell. Place on baking sheet. I save the pulp for making potato pancakes.

  • Step 3: Combine oil, parmesan, salt, garlic powder, paprika and pepper and brush on potatoes, bottom first, then top. Bake about 8 minutes and turn over. Bake for another 6 minutes or so, then turn right side up.

  • Step 4: Sprinkle cheddar, bacon and green onions evenly inside skins and bake 2 minutes longer or til cheese is melted. Serve with sour cream.
