"Chinese Pie” or “Pâté Chinois.” Thought to have been created by Canadian immigrants working on the railroad in China, Maine. There’s no doubt that this is a huge part of New Hampshire history. Can add Campbell vegetable soup to meat and sprinkle cheddar cheese on top of potatoes"

Step by Step Method

Step 1

Preheat oven to 350F.

Step 2

Heat oil in a large skillet .

Step 3

Add onion and cook 3-4 minutes,

Step 4

Add ground beef, salt and pepper to taste

Step 5

And cook until brown and breaking up any large chunks with a spoon.

Step 6

Drain off most of the fat.

Step 7

Place into a casserole dish making a nice layer.

Step 8

Sprinkle on frozen corn

Step 9

Layer the creamed corn on top.

Step 10

Spread the mashed potatoes on top being sure to completely cover the corn layer.

Step 11

Dot with butter

Step 12

Sprinkle a thin dusting of paprika on top of the potatoes.

Step 13

Bake for 35 minutes or until golden brown.

Step 14

The corn layer should bubble slightly around the edges of the potatoes.

No special items needed.

I made a couple of changes to this recipe by using all frozen corn (1 and 1/2 cups) as I do not like creamed corn and I added 1 cup beef gravy to the meat mix so it didn't turn out dry because of not using the creamed corn. It worked out perfectly. Great Pate Chinois!!
